Roasted Asparagus & Peppers With Feta
Ingredients:
- 1 lb asparagus, trimmed
- 1 red pepper, chopped
- 1/4 cup light balsamic vinaigrette salad dressing
- 2 tablespoons feta cheese, the type with Oregano, Sun Dried Tomatoes and Cracked Peppercorns Cheese
Directions:
- 1Heat oven to 400ºF.
- 2Arrange asparagus in row on foil-covered baking sheet. Sprinkle peppers onto bottom ends of spears.
- 3Bake 20 minute or until vegetables are crisp-tender.
- 4Top with dressing and cheese.
