Perfectly Easy Dinner Rolls













·         1 cup warm water (105 F to 115 F)
·         2 (1/4 ounce) packages active dry yeast (4 1/2 teaspoons)
·         1/2 cup butter, melted
·         1/2 cup sugar
·         3 eggs
·         1 teaspoon salt
·         4 -4 1/2 cups all-purpose flour
·         additional melted butter (optional)

Directions:

Combine the warm water and yeast in a large bowl.
  Let the mixture stand until yeast is foamy, about 5 minutes.
 Stir in butter, sugar, eggs and salt.
Beat in flour, 1 cup at a time, until dough is too stiff to mix with a spoon (some flour may not be needed). At this point, use dough hook or knead on floured surface for 10 minutes until dough is smooth.
Place in a greased bowl and cover. Let rise until doubled, or at this point it can be refrigerated for up to 4 days.
Grease one 16.5x12-inch or two 12x9-inch baking pans.
Turn the chilled dough out onto a lightly floured board.
Divide dough into 24 equal-size pieces (about 50 grams each).
Roll each piece into a smooth round ball; place balls in even rows in the prepared pan.
Cover and let dough balls rise until double in volume, about 1 hour. (Remember if you are using dough that has been refrigerated and is cold this step will take longer).
Brush warm rolls with melted butter, if desired.
Break rolls apart to serve

Avocado & Jalapeno Salad








Ingredients:

·         4 ripe Hass avocadoes (halved, pitted and cut into 1/2-inch wedges)
·         3 tablespoons fresh lime juice
·         salt & freshly ground black pepper
·         1/4 cup cilantro leaf
·         1 -2 large red jalapeno chiles or 1 -2 large green jalapeno pepper, seeded and thinly sliced

Directions:

1. Arrange avocado slices on a serving dish.
2. Sprinkle with lime juice and season with salt and pepper.
3. Sprinkle with cilantro leaves and jalapeƱos. Serve.


My Food Coach's Spinach Salad









Ingredients:

·         1 tablespoon balsamic vinegar
·         1 tablespoon white wine vinegar
·         2 tablespoons olive oil (try Trader Joe's Unfiltered Extra Virgin California Estate Olive Oil)
·         1/2 teaspoon garlic, minced
·         8 cups baby spinach leaves
·         1 red onion, chopped
·         3 hard-boiled eggs
·         1 cup crouton, if desired
·         black pepper, freshly ground, to taste

Directions:


1. Whisk dressing ingredients (vinegars, olive oil and garlic) until they form a homogenous mixture.
2. Pour dressing quickly over spinach.
3. Remove shell from hard boiled eggs and slice long-ways in 8ths.
4. Add sliced hard boiled eggs, red onion and black pepper.
5. Add croutons in amount called for or as desired.


Fruit Salad


·         1 (29 ounce) can peach slices, untrained
·         1 (20 ounce) can pineapple chunks, untrained
·         1 (3 1/8 ounce) box dry vanilla instant pudding mix
·         1 lb strawberry, stemmed and quartered
·         banana, sliced
·         1/2 pint blueberries
·         1 bunch grapes (I use the red ones)
·         1 -2 tablespoon sugar (optional)
Directions:
1,In a large bowl, combine peaches, pineapples, and vanilla pudding mix.
2,This includes the juices from the cans.
3.Mix well until pudding is dissolved.
4,Stir in strawberries, banana, blueberries, grapes, and sugar if desired.
5,Chills.

I  like my salmon somewhat rare, so I prepared it that way. But the thing that really adds to the overall pop-up-flavour is the rather delicious lime and soya Asian dressing. So here’s to family, Easter lasting memories and fresh food. Blessed Easter everyone!
Serves: 2
Cooking and preparation time: ½ h
Ingredients
2 x 200,g Fresh salmon steaks
1,T Olive oil
Avocado – sliced into small blocks
Baby tomatoes – halved and then in three
Cucumber ribbons – I take my potato peeler and run it over the cucumber
Spring onions – finely sliced
Radishes – sliced into thin slices
Fresh coriander
Chillies 
dressing
50 ml Soya sauce
Juice of one to two small limes
1,t Sesame oil (optional)
2,t Grated ginger
1t Fish sauce
1,T Fresh coriander – chopped
1/2 t Chillies flakes
Method
1. Fry your salmon for three minutes with the skin side down in a non-stick pan – don’t turn it around and don’t season at this stage and let it stand to rest. The intention is to serve it Luke warm not piping hot.
2. Chop up all your salad ingredients and make your dressing by mixing everything together.
3. Now just place this beautiful cut of fish on a plate. Place the salad on top and put the dressing on the side.
4. I don’t add any salt at this stage and leave it to the guests to decide how much salt they need because the dressing is quite salty.

Peanut Butter and Jelly Milkshake
1 tablespoon peanut butter
2 tablespoons jelly or jam (grape, raspberry or strawberry)
1/2 cup milk
1 cup vanilla ice cream

Directions

Combine peanut butter and jelly. Place in blender. Add milk and ice cream.
Blend until smooth.


Banana Chocolate Milkshake
                              1 cup skim milk
                              2 tablespoons cocoa
                              1/3 cup sugar
                              1 teaspoon vanilla extract
                              1 medium ripe banana, sliced
                              8 large ice cubes

                              Directions                                                                                                     In blender container pour milk. Add cocoa. Cover, blend on low speed until well mixed.                                           Add sugar, vanilla and banana. Cover, blend until smooth. 

Add ice cubes, one at a time, blending until thick.

Weight Watchers 4 pt. Cola Chicken This chicken is absolutely delicious! Serve over rice and enjoy


Ingredients:


·         boneless skinless chicken breasts
·         1 cup ketchup
·         1 diet cola
·         1/2 cup chopped onion (optional)
Directions:
 1 In a skillet, mix ketchup and cola.
2 Add chicken and onions.
3 Bring to a boil and cover. Reduce heat to medium and let cook for 45 minutes.
4 Remove lid and simmer until thickens.

When it comes to things like chicken, pork and ground beef, yes, definitely! But the risk for steak is different. If a cut of steak is going to have any bacteria, it's just about always going to be on the outside. Steak doesn't contain the parasites that plague chickens and pigs. However, the outside should be cooked and handled with clean instruments.

Ground beef, on the other hand, is going to have bacteria spread throughout. You are more likely to get E. Coli by eating under-cooked ground beef. Go for a well-done hamburger.

Our biggest worry with chicken meat is salmonella. It's very common for chickens to carry salmonella, which permeates its flesh. The only way to kill the salmonella is to thoroughly cook the chicken meat.

Under-cooked pork is potentially even worse than under-cooked chicken. There's a risk of developing trichinosis as a result of eating under-cooked pork... if the pig was infected the larvae of a trichina worm.
